Traditional Balsamic Vinegar of Modena P.D.O. is produced with a single ingredient, the must obtained from the first pressing of the native Modena grapes. The production technique has refined over the centuries. The must is cooked in open vessel boilers over direct heat and atmospheric pressure for several hours, then left to cool and ferment in large wooden or glass containers, recently stainless steel is mostly used as a material that is easier to clean and less delicate than glass.
